Hi there.
Can I still use Z term on an old Mac laptop running 10.6.2 to update the Octopus to the latest version?

Yes, if you are able to connect with USB and are able to see the boot-up print out in the terminal then you should be good to go. It's only the very last command that actually writes the OS to flash memory.
